When clicking on one of my existing spam email address and selecting the option "click here to send a message from this address" the recipient of this email will have all of the internet "received:"headers containing the original source of the email. Could spam gourmet remove those prior received: headers?

our code endeavors to remove references to your actual email address (your forwarding address), and does a pretty good job of that. We leave the mail routing information in place because (in some US states, at least) it's unlawful to mess with it. Comes back to us being a spam fighting service versus an anonymizing service.

If you do a google search for "anonymous remailer", you'll find some info on what's going in that area.
