The reason I've hesitated is because it would be so easy to hang oneself that way if the user made a typo or (more likely) didn't understand the implications of changing the exemplar.

That said, if we can come up with a palatable way to do it, I'd me more than happy to. I've only thought about it, I haven't discussed it, so I may be missing something obvious.
I agree with xdcdx here, just limit the change to the number/word in between the periods (including having NO word in there at all if I choose) and some spamgourmet domain (for safety reasons you'd end up excluding people who use domains that forward all to spamgourmet, but they can't get their domain in an exemplar now anyhow I suspect).
So if I started with the exemplar
woohoo.20.nouser@someDGdomain.com I would see options like this:
woohoo.____.nouser@_________
The first blank would allow me to type in any word or number or leave it empty, the second blank would have a drop down of all available SG domains.
This way the resulting exemplar would still, necessarily point to the same account, and the same trigger word, but now my address masking would point back to the address in the format I want.
This would be great for those exemplars with spamgourmet as the domain even though I use xoxy.
